A Caribbean-style macaroni pie doesn’t need a roux and comes out in a more “pie-like” consistency compared to the gooeyness of mac and cheese.

Ingredients:
- 2 boxes of boxed mac ‘n’ cheese (Kraft, for example)
- 1 lb elbow macaroni
- 4 cups grated cheddar or marble cheese
- 1 can evaporated milk
- 2 eggs
- 1 diced Scotch Bonnet pepper
- 1 diced onion
- 1 tsp dry mustard
- A dash of black pepper
- Salt to taste
Instructions:
- Preheat your oven to 350°F.
- Cook the elbow macaroni according to the package instructions, then drain and set aside.
- In a large bowl, prepare the boxed mac ‘n’ cheese according to the package instructions.
- Add the cooked elbow macaroni to the bowl of prepared mac ‘n’ cheese and mix well.
- In a separate bowl, whisk together the evaporated milk, eggs, diced Scotch Bonnet pepper, diced onion, dry mustard, black pepper, and salt.
- Pour the milk and egg mixture over the macaroni and cheese mixture, then add 3 cups of grated cheese. Mix well to combine.
- Transfer the macaroni mixture to a greased baking dish and sprinkle the remaining 1 cup of grated cheese on top.
- Bake for 30-40 minutes, or until the top is golden brown and the cheese is bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
