Jamaican jerk pork is famous for its bold, spicy flavors, succulent texture, and the irresistible aroma that wafts through the air, beckoning all nearby to the feast. Rooted in the vibrant culinary tapestry of Jamaica, it’s a celebration of the island’s rich cultural history. These jerk pork skewers are marinated in a blend of traditional spices before being cooked to perfection on the grill. Ingredients:

For the Marinade:

  • 2 pounds pork loin or shoulder, cut into 1-inch cubes
  • 3 tablespoons Jamaican jerk seasoning (homemade or store bought)
  • 2 tablespoons soy sauce
  • 3 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons fresh thyme leaves
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon allspice
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste

For the Skewers:

  • Wooden or metal skewers (if using wooden, soak them in water for at least 30 minutes)

Instructions:

  1. Prepare the Marinade:
    • In a bowl, combine the jerk seasoning, soy sauce, olive oil, brown sugar, apple cider vinegar, thyme, minced garlic, grated ginger, allspice, smoked paprika, salt, and black pepper.
    • Mix well until a thick paste forms.
  2. Marinate the Pork:
    • Place the pork cubes in a large bowl or resealable plastic bag.
    • Coat the pork evenly with the jerk marinade, ensuring each piece is well covered.
    • Seal the bag or cover the bowl and refrigerate for at least 2 hours or, ideally, overnight to let the flavors penetrate the meat.
  3. Preheat the Grill:
    • Preheat your grill to medium-high heat. If you’re using wooden skewers, start soaking them in water now.
  4. Skewer the Pork:
    • Thread the marinated pork cubes onto the skewers, leaving a small gap between each piece for even cooking.
  5. Grill the Skewers:
    • Place the skewers on the preheated grill and cook for about 12-15 minutes, turning occasionally, until the pork is fully cooked and has a delicious char on the outside.
  6. Serve and Enjoy:
    • Remove the skewers from the grill and let them rest for a few minutes.
