Rum-Glazed Chicken Wings on the Grill

Ingredients:

For the Chicken Wings:

  • 2 pounds chicken wings, split at joints, tips discarded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste

For the Rum Glaze:

  • 1/2 cup dark rum
  • 1/4 cup brown sugar, packed
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon Caribbean jerk seasoning (adjust to taste)
  • Fresh cilantro, chopped (for garnish)

Instructions:

1. Marinate the Chicken Wings:

  • In a large bowl, toss the chicken wings with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Ensure the wings are evenly coated. Allow them to marinate for at least 30 minutes, or refrigerate for a more intense flavor, up to 4 hours.

2. Preheat the Grill:

  • Preheat your grill to medium-high heat. Oil the grates to prevent sticking.

3. Grill the Chicken Wings:

  • Place the marinated chicken wings on the preheated grill. Grill for about 15-20 minutes, turning occasionally, until the wings are golden brown and have a nice char. Ensure they are cooked through with an internal temperature of 165°F (74°C).

4. Prepare the Rum Glaze:

5. Glaze the Chicken Wings:

  • During the last 5 minutes of grilling, brush the chicken wings with the prepared rum glaze, turning them to ensure an even coating. Continue to grill until the glaze becomes sticky and caramelized.
