Georgia peaches are known for being sweet and juicy, making them the perfect base for a fresh and fruity concoction. Combined with the effervescence of a chilled glass of Prosecco, you’ll hardly find a more refreshing and sun-kissed cocktail.

Using only a handful of ingredients, this deceptively simple libation is an easy way to add some luxury to an ordinary day. With just one sip, you’ll be transported to a fabulous garden party or beachside cabana.

Georgia peach bellini

Ingredients

  • 2 ripe Georgia peaches, peeled, pitted and diced
  • 1 tablespoon honey or simple syrup
  • Prosecco, well chilled. Recommended substitutes include champagne or another dry, sparkling wine
  • Fresh mint leaves for garnish
  • Peach slices for garnish

Tools

  • Champagne flutes, or whichever tall, slender glasses you prefer
  • Blender/food processor or muddler

Instructions

  1. Create a peach puree by muddling the diced peaches, or by using a food processor or blender for a smoother cocktail. Stir in the honey or simple syrup. Add a bit more if you like a sweeter bellini.
  2. Pour 2 tablespoons of the sweetened peach puree into each glass.
  1. Slowly pour in the Prosecco, filling it to the brim. Use a long spoon or stirrer to ensure the peach puree is fully incorporated. Avoid overmixing or you’ll lose the bubbles.
  2. Garnish with fresh mint leaves and a peach slice.
  3. Serve, sip and enjoy!
